My suocera prepares olives the exact same way. She gathered some that had dropped from the trees at our house in Montalcino, brought them back to her house in Rome, and when we visited a week later, they were ready.
It took me a few days to get to this post, but as usual, I loved it and all the little reminders about things like San Martino and the 1966 flood. I've seen porcini in the market stands but have not yet purchased any. I have limited cooking capacity where I am staying right now . . . Wow, this post brings me back to 1966 : I was teaching in an international school in Rome and all my Italian friends ( guys mostly) left to help in Florence ___such a tragedy !
I stole my father's shovel, ran away from school, took a train from Victoria Station and went to Florence to help dig out from the flood. Your piece brought back so very many memories, most of them wonderful.
Have you been in touch with city hall for the MUD ANGELS??? They created something to honor those who came and helped. I met one of the American students here studying that also helped.

I haven’t bought any , I prefer to have someone else prepare them! Unless I know they are really fresh!

Weather is scary. We are helpless. It seems to be getting worse everywhere.

oh Judy the flooding is terrifying. The off season anywhere is my favourite time to travel. I love being somewhere alone. Your olives look gorgeous.
