Regional recipes in Sicily are always fascinating to me. How many variations there are and the subtle differences. As I travel coast to coast, I discover simple differences. You also see the influences from the various cultures that ruled Sicily.
Spanish, Arab,Norman and more. This last trip I was hosting Susana Trilling from Oaxaca, Mexico and designed the tour to feature the influences from Mexico also brought from the Spanish to Sicily.
From the beautiful cactus plants everywhere to the chocolate in Modica which is exactly like that of Oaxaca. Sicily never ceases to surprise me.
The tomato of course was Mexico’s gift to Italy.
